- Crust Matcha Lime Tart
- 100g (1 cup) Captain Oats Rolled Oats
- 80g (½ cup) almond nut
- 40g (½ cup) dr grated coconut
- Salt
- 2 tbsp coconut oil
- 2 tbsp honey
- 1-2 tbsp cold water
- Tart Filling
- 250ml coconut milk
- 1 squeeze of lime juice and ½ lemon squeeze (total ¼ cup)
- ¼ cup honey
- 2 tsp matcha powder
- 1 tbsp cornstarch
- 1 tsp jelly powder
Methods
- Crust Matcha Lime Tart
- Mix Captain Oats Rolled Oats, almonds nut, dry grated coconut. Blend until the texture is coarse.
- Add oil and honey, blend again.
- Add cold water (optional).
- Move to a pie pan with 20cm diameter, condense by pressing.
Bake the crust tart on 180°C for 12 minutes.
- Chill at the cooling rack.
- Matcha Lime Tart Filling
- Mix jelly powder, cornstarch, and matcha powder.
- Pour coconut milk while stirring. Stir until mixed well.
- Add honey, lemon and lime squeeze, stir thoroughly.
- Boil until thicken.
- Chill before pouring into a tart crust.
Keep in the fridge for 4 hours.
