Garden Salad in Yogurt

Add more crunch to your creamy salad bowl by sprinkling toasted oats over and mixing it in!

Ingredients

  • 2/3 cup of toasted Captain Oats Instant Oatmeal
  • 1 medium red apple, cut into cubes
  • 1/2 medium cucumber, cut into cubes
  • 2 large pieces of salad leaves, cut into small squares
  • 5 green/black grapes, halved and seeds removed
  • 1 small boiled carrot, cut into cubes
  • 1 medium boiled potato, cut into cubes
  • 1/4 teaspoon of salt to taste
  • 10 pieces of grilled cashew nuts
  • 1/2 cup boiled chick peas

  • 1/4 cup boiled frozen peas, drained
  • 3 tubs low fat mango flavoured yoghurt
  • 2 tablespoons of toasted sesame seeds
  • 1/2 teaspoon of white pepper powder
  • 1/4 teaspoon of cardamom powder

Methods

  • In a large glass bowl, mix all the above thoroughly except the yoghurt.
  • Sprinkle with toasted oats and sesame seeds and then serve immediately.
  • Remove from steamer. Add sesame oil and spring onions. Sprinkle with fried shallots. Serve hot.
